    Vitigno: Nebbiolo 100%

    Vigneto: due piccoli vigneti di proprietà di 2900 e 900 metri quadrati, in comune di Treiso, entrambi con esposizione a Sud Est.

    Epoca di vendemmia: inizio di Ottobre.

    Tipo di vendemmia: raccolta manuale, con attenta cernita; l'uva viene raccolta in ceste bucherellate di materiale plastico, per impedire fermentazioni anomale.

    Vinificazione: avviene immediatamente dopo la raccolta delle uve.

    Pigiatura con deraspatura; fermentazione in recipienti di acciaio con controllo della temperatura e con macerazione a cappello sommerso per 12/15 giorni, alla temperatura massima di 30°C.

    Maturazione: il Barbaresco illimpidisce in contenitori di acciaio fino alla primavera dopo la vendemmia, epoca in cui incontra le piccole botti, nelle quali matura per almeno 12 mesi.

    Dopo l'assemblaggio delle piccole partite, ad agosto del 2° anno dalla raccolta delle uve il Barbaresco va in bottiglia.

    Affinamento: il Barbaresco si affina in bottiglia coricata, nelle cantine interrate per almeno 6-8 mesi prima di avviarsi al consumo.

    Annata 2018 : gradazione alcolica 15,00 % Vol.
    Acidità totale 5,42 ‰.

    Caratteri organolettici: color rosso granato pieno con tenui riflessi arancione; profumo intenso,avvolgente, con sentori fruttati di confettura di frutta e viola e sottili sentori di spezie (pepe verde, tabacco, cannella); sapore grande, pieno, caldo, ma vellutato ed elegante

    A tavola: vino di ampia struttura, intenso e suadente, accompagna con eleganza i piatti importanti, dai primi piatti molto saporiti ai grandi secondi di carne rossa, i formaggi di lunga stagionatura ed i dolci cotti a bagnomaria

    Servizio: sono essenziali gli ampi calici di cristallo; é utile servirlo alla temperatura di 18° C.

    Grape Variety : Nebbiolo 100%

    Vineyard Info: Two small vineyards of 2900 and 900 square metres, both south-east facing, in the borough of Treiso.

    Harvest Period: Early October.

    Harvest Method: Carefully selected by hand, the grapes are collected in perforated plastic baskets, in order to avoid anomalous fermentation.

    Vinification: Takes place immediately after the bunches are picked.
    Pressing with destemming is followed by fermentation in temperature-controlled steel containers with submerged-cap maceration for 12-15 days at a maximum temperature of 30°C.

    Maturation: The Barbaresco is clarified in steel vats until the spring after harvest, when it is matured in small casks for at least twelve months.
    After assemblage of the small batches, the Barbaresco is bottled in August of the second year after harvest.

    Refinement: The Barbaresco is refined in the bottle in the cellars for at least 6-8 months before going onto the market.

    2018 Vintage: Alcohol Content 15,00 % Vol.
    Total Acidity 5.42 ‰.

    Sensory Qualities: A full gannet-red colour with orange highlights and an intense, compelling bouquet with hints of fruit preserves and violets plus subtle suggestions of spices (green peppercorns, tobacco, cinnamon). Big-flavoured, full-bodied and warm, yet velvety and elegant.

    Pairing: Aw ell structured wine, intense and persuasive, which accompanies important dishes with elegance, from flavoursome pasta or rice first courses to big, red-meat based main courses as well as extra-mature cheeses and desserts cooked in a bain-marie.

    Serving: Serve at 18° C; generous crystal glasses are a must!

    Rebsorte: 100% Nebbiolo

    Lage: Zwei kleine Weinberge von 2900 und 900 qm in der Gemeinde Treiso, beide nach Südost gelegen.

    Erntezeit: Anfang Oktober

    Erntetechnik: sorgfältige Lese und Selektion der Trauben per Hand; die Trauben kommen in perforierte Kuststoffkörbe, um vorzeitige Fermentierung zu verhindern.

    Vinifizierung: sofort nach der Ernte. Pressen mit Entrappen (Entfernen der Stiele und Kämme), Fermentation in Edelstahlbehältern mit Temperaturkontrolle und mazerations-(Maische-)zeit mit getauchtem Tresterhut für zwölf bis fünfzehn Tage; maximal Temperatur: 30°C.

    Reifung: Der Barbaresco ruht in Edelstahlfässern bis zum folgenden Frühjahr; dann wird er in kleine Fässer umgefüllt, in denen er mindestens zwölf Monate reift. Nachdem der Wein von den kleinen Faessern in ein grosses zusammengefuehrt wurde, wird er im August des zweiten Jahres nach der Ernte auf Flaschen gezogen.

    Ausbau: Der Barbaresco wird im Keller auf der Flasche für mindestens 6 – 8 Monate ausgebaut, bis er trinkreif ist.

    Charaktereigenschaften: Farbe:volles Granatrot mit zart orangefarbenen Schattierungen; intensiver, verführerischer Duft mit fruchtigen Noten von Konfitüren, Veilchen und subtilen Anklängen an Gewürze (grüner Pfeffer, Tabak, Zimt); großer, voller Geschmack, warm, samtig, elegant.

    Empfehlung: ein sehr strukturierter Wein, dicht und einnehmend, der auf elegante Weise besondere Gerichte begleitet, vom würzigen Risotto oder Nudelgericht über die Gerichte von dunklem Fleisch, die würzigen, sehr reifen Käse bis hin zu den Desserts wie Flan oder Bonet.

    Servieren: Unbedingt in großen Kristallkelchen bei einer Trinktemperatur von 18°C.
